Our harvest

Dear friends,
we started the harvest in August, picking the grapes of Pinot Grigio, and now we are finishing the grapes in Valpolicella Doc area. Still not long to go to start picking the Garganega grapes.
Today we want you to discover something more on the grapes that characterizes Soave Classico area. Among the many and refined wines produced in Verona, only in the Soave Classico area, on the hills made of tuffaceous soil (volcanic origin) and calcareous outcrops, you can find the perfect marriage between the environment and the vine variety for the production of a high quality white wine.
The indigenous white grapes that we use for our Soave Classico wines are Garganega and Trebbiano di Soave, which find their natural expression on these hills.
Garganega does not have marked aromatic qualities, but holds a small treasure made of delicate scents, like almonds and white flowers. When the skin of the grape turns to a deep yellow colour (almost orange) it is ready to be harvested, normally in October. It does not have a strong acidity, but extracts and sugars are well balanced. Trebbiano di Soave, historically present in Soave, is characterized by a good sapidity and vividness.
