    Chicken and Veggies cous cous

     

    Looks like summer is here! Days are getting longer, we have more time to enjoy the warm nights and spend them in good company, so what better occasion to try and share a new, fresh and tasty recipe?
    Today we recommend a quick and easy recipe with the colours of the summer (in addition to be good for the health will also prepare you to a nice tan) to be shared with some good friends in company of a good wine!
    To prepare this dish you could also decide to limit as much as possible the flame (we know that with this hot weather, fresh dishes are preferred). In this case, our advice is to leave the vegetables raw, without cooking but just cutting them  in cubes , preserving this way their colours and characteristics and also making it easier to prepare.

    Recipe:

    Chop the onion and lightly fry it in a pan with 2 spoons of olive oil. Cut the tomatoes, zucchini, carrots and pepper in cubes and add it to the onion. Stew them for about 10 mins over medium flame, add the salt and, if necessary, a spoon of hot water, cooking it for 4/5 mins more.
    In a bowl mix 2 spoons of olive oil, the lemon juice, salt, pepper and the grounded rosemary. Cut the chicken in stripes, dive it in the oil and spices and let it rest for about 10 mins.
    In a large pot boil 300 ml of water, a pinch of salt, one spoon of oil and pour the cous cous in the water. Move the pot from the flame, add the butter and mix it.
    Let it rest for about 10 mins. Take off the chicken from the bowl and cook it in a non-stick pan until it starts to brown.
    When the cous cous will have absorbed all the water, put it in a big bowl and put on it the vegetables, the chicken, the parsley and a light dusting of pepper. If necessary add one spoon of oil, mix everything together and serve it.

    The perfect match for this dish is our Soave Classico “Campolungo”, with its good balance and minerality is perfect for white meat based dishes and vegetables. We recommend to serve it chilly (10°) and put it in a glacette to keep the right temperature.
